Huzzah, I can't believe I got all of them! Love all of these books! Have you ever read the sequel to your "easy" choice? (Not wanting to leave a spoiler answer.) I find most people haven't heard of it, but it's a fun book. Oh, and I also love the sequel to "medium" - almost no one has heard of it, but it's really interesting, and a very interesting view into 1920s social order (and growing social disarray).
Oh, and two more that come to mind - both from the Grandma's Attic series - (1) when Mabel and Sarah Jane play a (pretty mean!) trick on Wesley, and (2) when Mabel stuffs Roy's pillow with weeds. That series has a lot of humorous moments - there are probably more pranks in there than I'm remembering.
There are so many from the Little House series and from Grandma's Attic. My daughter is reading through Grandma's Attic now and just about every story is hilariously funny.
I'm partial to the dragon-firework prank in The Fellowship of the Ring, and the thoughtful planning on Bilbo's part to have it serve as the transition to dinner so as to allow all the startled hobbits the opportunity to recover in comfort.

Another that came to mind was Ma and the "apple pie" made of green pumpkin. Not sure if that counts as a prank, but it was a great story! :)
My kids think the animals in the Bremen Town Band pranking the robbers is pretty great. Of course many fairytales have pranks/tricks.
My favorite pranks in literature is in Jane Eyre, which I won't reveal for fear of spoilers
